8 to 10 new potatoes
1 pound Velveeta cheese, cubed
1/2 cup chopped onion
1 (4-ounce) jar chopped pimentos
1 teaspoon parsley, chopped
1/2 teaspoon paprika
1 teaspoon onion salt
Bread crumbs from 2 slices bread
1 1/2 sticks margarine or butter, melted (I didn't use this much)
Boil unpeeled potatoes in enough water to cover, until tender; drain.
Peel and dice potatoes.
Cube cheese and mix with potatoes.
Add onions, pimentos, parsley, paprika and onion salt; mix well.
Pour into a large greased casserole dish.
Top with bread crumbs.
Pour melted butter over bread crumbs.
Bake at 350ºF for 15-20 minutes, or until cheese is melted.
