1/2 cup cottage cheese
1/2 cup cream cheese, softened
1 pound asparagus, cooked and cut into 2" pieces
1 teaspoon grated orange rind
1 large egg, beaten
1 package puff pastry, thawed overnight in the fridge
Mix the first four ingredients in a bowl.
On a well floured surface, roll the puff pastry out very thin.
(Be sure to keep your roller floured, and flip pastry piece to roll each way)
Cut with a sharp knife, into 6 or 8 equal rectangles.
Put a generous amount of the filling, lengthwise and centred on each rectangle.
Dot edges of the pastry with the beaten egg.
Fold edges together and crimp around with a fork.
Brush top of roll with beaten egg.
Place on a baking sheet and bake in a 350ºF oven for 7 to 10 minutes, or until golden brown.
