1 head broccoli
2 carrots, sliced diagonally
1 small yellow pepper, cut in strips
1/2(6-ounce) can water chestnuts, sliced
2 scallions, (green onions) sliced diagonally
1/2 can whole baby corn (optional)
3 Tablespoons peanut oil
3 Tablespoons rice wine vinegar
2 Tablespoons reduced sodium soy sauce
1 teaspoon grated ginger root
1 teaspoon sesame oil (optional)
1/2 teaspoon crushed red pepper
1 clove garlic, minced
Sesame seeds for garnish
In 1-quart casserole, combine broccoli, carrots and 2 Tablespoons water.
Cover with paper towel.
Microwave on high 4 minutes.
Add broccoli and carrots to serving platter along with next 4 ingredients.
In small bowl, combine peanut oil, vinegar, soy sauce, ginger root, oil, pepper and garlic.
Pour over vegetables, tossing to coat well.
Garnish with sesame seeds.
