1/4 teaspoon pepper
3 Tablespoons chopped fresh parsley
2 (15-ounce) cans butter beans, rinsed and drained
1 (11-ounce) can shoepeg corn, drained
1 (14.5-ounce) can zesty chili diced tomatoes, drained
1 small red onion, chopped
In large bowl, combine vinegar, olive oil, salt, pepper, and parsley and mix well with wire whisk.
Add remaining ingredients and toss to coat.
Cover and chill 2 hours, or serve immediately.
