1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
3/4 teaspoon ginger
1/4 teaspoon mace
1 cup steamed squash, strained
3 large eggs
1 cup heavy cream or evaporated milk
1 pastry for 9-inch pie pan
Add sugar, salt and spices to squash and mix thoroughly.
Beat eggs, add cream and mix with squash.
Line 9-inch pie pan with pastry and pour in squash mixture.
Bake in a very hot oven (450ºF) 10 minutes then reduce heat to 350ºF and bake 40 minutes longer or until knife inserted in the center come out clean.
