1 pie crust
4 cups fresh blueberries, divided into 1 cup and 3 cups
1 cup sugar
3 Tablespoons cornstarch
1 cup water
1 squirt lemon juice (about the juice of 1/2 lemon)
1 Tablespoon butter
whipped cream or ice cream
Prepare pie crust and bake.
Cool while preparing the filling.
Cook 1 cup blueberries, sugar, cornstarch, water ,and lemon juice until the sauce is thick and shiny.
Cool to lukewarm.
While still warm, add the butter and remaining 3 cups fresh blueberries.
Pour mixture into shell.
Top with whipped cream or vanilla ice cream to serve.
