1 pound ground beef
1/2 pound chorizo
1 (16-ounce) can kidney beans
1 (16-ounce) can pinto beans
1 (8-ounce) can tomato paste
1 (12-ounce) can beer
1 (4-ounce) can chopped green chiles (or fresh if you can get them)
1 large yellow onion, chopped
3 heaping Tablespoons Santa Cruz chili powder
1 Tablespoon Tabasco sauce
3 beef bouillion cubes OR a Tablespoon of good beef flavor paste OR 1/2 a cup of homemade beef stock
1/2 pound CRISP bacon, chopped (you have to almost char the bacon or it gets really nasty and rubbery in the chili)
Brown the hamburger, chorizo and onions in a pan.
Throw everything else (except the bacon) into the slow cooker and mix.
Let it cook for about a half an hour.
Add the ground beef mixture.
Let it cook for about 3 hours on High setting, stir, then add the crispy bacon bits.
Cook for another 15-20 minutes, then serve.
