This is for a 4-quart slow cooker.
Sauce:
1 large can tomato sauce
2 Tablespoon tomato paste
1/4 cup port wine (or chianti or whatever fruity red you might have on hand)
2 teaspoons Worcestershire sauce
1 large onion, sliced thinly
1 large Bell pepper, sliced thinly
2 cloves garlic, crushed
1 sprig fresh rosemary, (strip the leaves from the stem)
salt and pepper to taste
(I also usually add a cube or two of beef boullion)
Take a round steak (I usually use a 2 1/2 pound steak) and cut it into pieces that are roughly 3"x3"- ish.
Don't trim any of the fat.
Dredge the steak pieces in seasoned flour and sear them in a pan of hot oil.
When both sides are brown, throw the pieces into the crock pot with the sauce.
Set it on high and let it simmer for about 2 1/2 hours OR set it on low and let it simmer all day while you're at work.
I like to slow cook mine, as it gets the meat VERY tender.
Plus my house smells heavenly when I get home from work.
