4 Portabella Mushroom caps
4+ Tablespoons Olive Oil
Salt and Pepper to taste
1 bunch watercress, washed and trimmed
1 box Boursin cheese
4 good rustic bread rolls, I like ciabatta
Wash mushrooms and cut off the stem.
Pat dry then sprinkle olive oil, salt and pepper over both sides of the mushrooms.
Grilled the mushroom on both sides to desired texture.
Toast/grill bread if desired.
Spread some Boursin cheese on the top half of the bread then add some watercress.
Add the grilled mushroom on the bottom half of the bread and join together.
