Potatoes and Eggs Sandwich
This is NOT a contest entry, nevertheless, this posting for Potatoes and Eggs Sandwiches was inspired by Jen's Spaghetti Sandwiches. The recipe was part of a short feature in the latest Woman's World (see date below), entitled "Money-$aving Cooking with Grandma Clara!" Grandma Clara said, "To save money, my father would buy 100 pound sacks of potatoes. They're cheap,can be stored for months and they keep the wolf off your back when times are tough! So potatoes combined with other things we always had - like eggs-made for a satisfying and frequent meal in our house."
2 Tablespoons oil
3 to 4 potatoes, peeled and cubed
8 large eggs
Salt and pepper, to taste
8 thick slices bread*
Heat oil in large pan over medium-high heat.
Add potatoes and sauté for about 20 minutes or until soft and golden brown.
Crack eggs into pan with potatoes and stir until they become scrambled and golden in color.
Add salt and pepper to taste.
Lightly toast bread.
Spoon egg mixture between slices and enjoy.
*The bread pictured in the photo appears to be ciabatta, or Italian white bread.
