1 small head napa cabbage, shredded (about 2-3 cups)
1-2 carrots, thickly grated (about 1/2 cup)
2 scallions, sliced
1/2 red pepper, julienned
1 small can water chestnuts, sliced
1/2 cup Honey-Sesame Dressing (see recipe on LINK)
1-2 chicken breasts, diced (optional)
1/2 cup fresh pineapple, thickly diced
about 2 cups Romaine lettuce, shredded
1 cup fried wonton noodles (optional for garnish)
Mix the first 5 ingredients with 1/2 cup of the Honey Sesame dressing.
Let rest in fridge for at least 30 minutes.
Right before serving add the chicken (if using), pineapple and romaine and toss.
Add more dressing if needed.
Garnish with the wonton noodles.
