Yields 2 servings.
1 zucchini
1 (yellow) summer squash
1 teaspoon minced garlic
1 Tablespoon olive oil
2 (6-inch) pizza breads (whole pita bread)
6 ounces Mozzarella cheese, grated
1 (8-ounce) stewed tomatoes
1/2 teaspoon basil
1/2 teaspoon oregano
Preheat oven to 375ºF.
Slice zucchini and squash into 1/8th-inch thick slices.
In small saucepan, sauté zucchini, squash and garlic in oil until vegetables are almost tender.
Place pizza breads on cooking sheet.
Brush with garlic oil from saucepan.
Sprinkle half of mozzarella cheese over breads.
Spoon on stewed tomatoes and sauteed vegetables, dividing equally.
Sprinkle on basil and oregano.
Top with remaining cheese.
Bake 10 minutes, or until cheese is melted.
