(I think I've probably made this one, back in the day when we too were overrun with zucchini. The handwritten page definitely looks old and well-used. Oh, for the days of a dependable memory!)
4 3/4 cups chopped zucchini
1/2 cup + 2 Tablespoons chopped onion
1/2 cup + 2 Tablespoons diced celery
1 cup boiling water
1 cup chicken broth (or vegetarian chicken-style broth)
2 large eggs
1 (8-ounce) package herb seasoned stuffing mix
1/2 teaspoon butter flavor
1/4 teaspoon sage
Preheat the oven to 350ºF.
In a saucepan, combine the zucchini, onion, celery and boiling water; cook 15 minutes, then drain well.
Stir in the remaining ingredients.
Spoon into a greased, shallow 2-quart baking dish.
Bake uncovered for 25 minutes.
