1-2 Tablespoons rosemary leaves, rough chopped
2 cloves garlic, minced
1-2 teaspoon Kosher salt
1/2 teaspoon pepper, fresh grind
1/2-1 teaspoon red pepper flakes
1 cup olive oil
4-6 boneless skinless chicken breasts, 4 ounce average
8-10 slices fresh mozzarella
4-6 good crusty bread, I like ciabatta rolls
Lettuce and tomatoes as toppings if desired
Marinade should be made ahead of time to cool.
Pound chicken breasts so they're more even in thickness.
Put the rosemary, garlic, salt, pepper and red pepper flakes in a bowl or jar.
Heat the olive oil until warm and pour over the herb mixture.
Let herb oil cool then pour over chicken breasts and marinate overnight or minimum of 4 hours.
Grill chicken breasts.
Slice rolls and place chicken on the bottom half add 2 slices of fresh mozzarella on top of the chicken and lettuce and tomatoes if desired.
Optional: Spread some basil mayo if desire on top half of roll.
