1 cup all-purpose flour
1 cup self-rising flour
1/2 cup castor sugar
1 large egg
2 Tablespoons cold water
1 cup cold stewed apple or tinned pie apple (2 SPC snack-pack puree apple)
Heat oven to 350ºF (180ºC).
Sift flours into large bowl
Rub butter into flour
Beat eggs with fork, then add water and mix.
Add liquids to dry ingredients, mix to a firm dough.
Using a quarter or half dough at a time, roll out and cut into rounds as for biscuits.
Place into a greased, 12 capacity patty pan (see photo).
Place a little apple on the bottom and fit another round on top.
Bake for 25 minutes.
When cold, ice with lemon or orange icing.
Makes 24 small apple tarts.
