"Sprinkles Cookie" Bars (LuAnn's "clone")

My all-time favorite cookie from a mall cookie-shoppe is the "Sprinkle" Cookie from Blondie's, an Indiana based company with (not nearly enough) locations, primarily in Indiana. Fortunately, or UNfortunately, as the case may be, we are lucky to have a Blondie's shoppe in "our" mall. The Sprinkles tempt me, almost beyond what I can resist, every time we go to the mall! For years, I searched for a clone recipe, so I could duplicate melt-in-your-mouth vision of sweetness at home. No luck. Although I did find that I was not the only one hoping to find a recipe. Many recipes were tried; with the hope THIS would be the one, but without success. Finally, I found a recipe that with several adjustments came as close as anything I've found. "Dangerously" close. Now the temptation is as close as my kitchen, rather than 30 safe minutes away at the mall! I should add, however, that this IS my CLONE recipe; not the recipe for "real" "Sprinkle" cookies. Only Blondie's can make those!

Blondie's Sprinkle cookies are available as separate cookies (a round, soft sugar cookie, generously frosted with fluffy buttercream), and the same cookie in a bar version, called "Baby Sprinkles". My recipe is for the quicker, bar version.

Yield: 1 (13x9-inch) pan


Sprinkle Cookie Bars:
1/2 cup margarine
1/2 cup butter
1 cup sugar
1 large egg
2 teaspoons vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups all-purpose flour

Fluffy Buttercream Frosting:
1/2 cup margarine
1/2 cup butter
4 cups powdered sugar
2 teaspoons vanilla
1/2 teaspoon salt
2 tablespoons (soy) milk

Nonpareil sprinkles or coarse colored sugar crystals


Preheat the oven to 375ºF.
Lightly spray a 13x9-inch pan with no-stick cooking spray.

To make bars:
Combine the margarine, butter, and sugar in the mixing bowl of an electric mixer.
Beat on medium-high speed for 2 to 3 minutes, or until light and fluffy.
Stop mixer to add egg and vanilla, then beat until smooth.
Stop the mixer to add the baking soda and salt, then beat until well mixed.
Stop mixer to add the flour, then mix in on low speed until a smooth dough is formed.
Spread the dough evenly into the prepared pan.
Bake in the preheated oven for 12 – 14 minutes, or until golden brown along the outermost edges.
(The center should no longer appear shiny and feel set but not firm when pushed lightly with a fingertip; do not over bake, the cookies should still be soft, with an almost “unbaked” appearance when cut in slices in order to most closely resemble Blondie’s “Sprinkles” ).
Remove the pan from the oven and place on a wire rack to cool.
Meanwhile, prepare the frosting (recipe below).
Do not frost until cookies/bars are completely cool.

To make frosting:
Combine the margarine and shortening in a the mixing bowl of an electric mixer.
Beat until softened.
Stop the mixer and add the remaining ingredients, then beat until smooth and fluffy, stopping and scraping the sides of the bowl if necessary.
When the cookies are completely cooled, spread evenly with the frosting, adding decorative swirls, if desired.
Immediately sprinkle frosting with non pareil sprinkles or colored sugar.
Cut into bars.
Store bars in the refrigerator, but serve at room temperature. (Do not leave bars unrefrigerated if is very warm since the frosting melts).

:recrev LuAnn, I tried your recipe for the "blondies" bars last night. I did not have any margarine in the house so I used a stick of butter and a 1/2 cup natural appleasauce. I also just used 1 stick of butter and made half recipe of the frosting. They turned out really good. VERY sweet, I found that out after I cut up brownie sized chunks for dessert. Thanks for sharing it :thup I had a meeting at church last night, so when I had mine they were still a bit warmish, but after they had set up in the fridge awhile they were even better.
