Finnish Berry Pie
A different blackberry pie with a mildly sweet crust and a sour cream filling.
7 Tablespoons butter or margarine
1/3 cup sugar
1 large egg
1 1/4 cup flour
1/2 teaspoon baking powder
2 to 3 cups blueberries or blackberries
1 cup sour cream
1/4 cup sugar
1 teaspoon vanilla
1 large egg
For the Crust:
Cream butter and sugar; beat in egg.
Add in sifted dry ingredients.
Press into bottom of and sides of 9 inch pie plate.
Bake at 400ºF for 10 minutes.
Remove from oven and add the topping ingredients.
Reduce oven to 350ºF and bake 20 minutes.
Chill before serving.

I made this for the first time this week.
For some reason I didn't expect it to make a very big pie, so I did not take the crust all the way to the top of the pan. Also, the crust puffed up more than I expected during the first baking. The result is that the topping over-flowed the crust. This was not a problem.
My DH enjoyed this pie a lot. I thought it was not quite sweet enough. In the future I will try adding more sugar to the crust. I think the topping was fine as written.
