Yield: 8 sandwiches
8 thick slices whole grain bread
1/2 cup mayonnaise
2 cups alfalfa sprouts or spicy sprout blend (alfalfa + radish)
2 - 3 ripe California avocados, pitted, peeled and sliced
2 - 3 large tomatoes, sliced
1/2 sweet onion, thinly sliced
8 ounces Cheddar cheese, sliced
Turn the oven on to “Broil.”
Set aside a large baking sheet.
Spread each slice of the bread with a thin layer of mayonnaise.
Top with a generous handful of sprouts (about 1/4 cup), 2 tomato slices, 3 to 4 avocado slices, several onion rings, a sprinkle of salt, if desired and a slice of cheese.
Arrange the prepared sandwiches on the baking sheet.
Place the baking sheet in the center of the preheated oven.
Watching carefully, broil for several minutes, until the cheese is melted.
