by LuAnn: I served this for dinner Sabbath. I thought of taking a photo of it, but it was already posted with a photo from Taste of Home, so doubted I could improve on theirs! This was an ingenious pairing of two summertime salad favorites: macaroni salad and coleslaw. While the sweet-tart creamy dressing was reminiscent of both salads, stirring the two salads together was a new experience. The combination of al dente pasta and crunchy coleslaw was surprisingly delightful, as I had hoped. Everyone commented that it was good and thought the recipe was a "keeper".
I made the recipe exactly as written except (you knew there would be an "except", didn't you?!), to use a fiber-enriched macaroni and to reduce the amount of onion by half. My family's only constructive criticism was that the finished salad needed a little more salt; mine was to cross out "water chestnuts" in the list of ingredients. Though they are a "must" for me in some things, I didn't care for their texture or appearance in this salad. Next time: no water chestnuts, an extra 1/2 teaspoon of salt, and I think it will be a perfect picnic, potluck dish. Familiar, yet different.
Prep: 25 minutes + chilling
1 (7-ounce) package ring macaroni or ditalini
1 (16-ounce) package coleslaw mix
2 medium onions, finely chopped
2 celery ribs, finely chopped
1 medium cucumber, finely chopped
1 medium green pepper, finely chopped
1 (8-ounce) can whole water chestnuts, drained and chopped
1 1/2 cups Miracle Whip Light
1/3 cup sugar
1/4 cup cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
Cook macaroni according to package directions; drain and rinse in cold water.
Transfer to a large bowl; add the coleslaw mix, onions, celery, cucumber, green pepper and water chestnuts.
In a small bowl, whisk the dressing ingredients.
Pour over salad; toss to coat.
Cover and refrigerate for at least 1 hour.
