1 small box orange jell-o
1 cup boiling water
1 cup cold orange juice
3/4 cup canned crushed pineapple, well-drained
3/4 cup shredded carrots
Make jello with boiling water and orange juice.
Chill until thickened like egg whites.
Fold in pineapple & carrots.
Spoon into individuall molds and chill until completely set.
Unmold onto a small plate, on top of leaf of lettuce.
