Turkey and Cucumber Sandwiches
The blogger recommended these for Weddings, Parties, etc. because they are so simple to make.
This recipe couldn't be simpler. We all know how to make a sandwich, but this blog took the time to post step-by-step photos of the process. I thought the whole thing was delightful and worthy of passing along, and I'll bet that soy-mayo is great. oz
10 slices turkey
3/4 cup mayonnaise (Best Foods light works well)
1 teaspoon soy sauce
With a vegetable peeler cut four stripes along the sides for the cucumber. Then slice the cucumber into thin rings.
Mix the mayonnaise and soy sauce together.
Spread the sauce on the rolls. Top with turkey and several cucumbers.
*Note: These sandwiches are best if made just before serving. If you plan to make them for a large crowd (not just for you and Sam-I-am) you can slice the cucumbers and make the sauce up to a day ahead, then the assembly will be quick.
