With an abundance of Blackberries growing right outside our front door I had to make something that wasn't just another pie. This is like a cross between a Cake and a Clafouti. It was delicious!
1/2 cup butter
2 cups flour
1 Tablespoon baking powder
1 teaspoon salt
1 cup white sugar
1 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 cups milk
4 1/2 cups blackberries (divided use)
1 medium lemon, juiced
2 Tablespoons white sugar, for sprinkling
Preheat oven to 350ºF.
Melt butter in a 9x13-inch baking pan.
In a medium bowl mix together the flour, baking powder, salt, sugars, cinnamon, vanilla and milk; batter will be very runny.
Put 4 cups of the blackberries in the pan of melted butter and toss them with the lemon juice.
Pour batter on top of the blackberries.
Sprinkle the remaining 1/2 cup of blackberries on top of the batter.
Bake in preheated oven for 40 minutes.
Sprinkle the berries on top with the remaining 2 Tablespoons sugar.
Return to oven and bake 10-20 more minutes or until golden brown.
