Sunny loves the flavor of Tomatillos so when I saw this I had to copy it.
The author served it on flounder.
Tomatillos, husks removed
1 dried red chili pepper
3 cloves garlic
1 small onion, chopped
1 Tablespoon fresh parsley
2 Tablespoons olive oil
salt and pepper, to taste
Place the first 6 ingredients into a food processor and purée until smooth.
Pour mixture into a pot and cook on stove at low-medium heat until the sauce has reduced by a third.
Season with salt and pepper.
