Many years ago I got this recipe at a Weight Watchers meeting. That was before the days of counting points.
1 Tablespoon plus 1 teaspoon margarine
1/2 cup chopped leeks
1/4 cup chopped celery
2 Tablespoons flour
2 packets instant chicken broth and seasoning mix dissolved in 2 cups hot water
2 cups skim milk
3 1/2 cups cauliflower florets
1 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon dill weed
1/8 teaspoon nutmeg
1 Tablespoon chives
In a 3-quart saucepan, heat margarine over medium high heat until bubbly and hot.
Add leeks and celery and sauté until softened.
Sprinkle with flour and quickly combine.
Stir in dissolved broth mix and milk and cook until smooth.
Add cauliflower florets and seasonings except for the chives.
Reduce heat to medium or simmer and cook until vegetables are tender.
Cool 5 minutes.
Pour 1/2 of the soup in a food processor and purée.
Add to the rest of the soup and heat.
Garnish with chives.
