Chicken Chili

A favorite Mexican resturant used to have something similar to this on their menu. They did a menu change and of course discontinued it. So I have been trying to come up with a version of a well liked favorite and this is it.

2-4 boneless/skinless chicken breasts
1/2 cup diced onion
2 cloves garlic minced
1 can red kidney beans, drained
1 can black beans, rinsed and drained
1 can diced tomatoes, undrained
1/2 can corn, drained
1 small can chopped green chili's
1/2 cup water
1 1/2 teaspoon beef boullion
1 or 2 teaspoon(s) chopped cilantro (can use a bit of dried if fresh not available)
2 teaspoons chili powder
1/2 teaspoon cumin
Salt and Pepper to taste
Sour cream, shredded cheddar cheese and tortilla chips for garnish and sides.


Cube chicken and brown in a skillet with 1 Tablespoon of olive oil.
Season with a bit of salt and pepper.
In a large soup pot add all ingredients and simmer for about an hour.
Serve the soup with a dollop of sour cream, a bit of shredded cheddar cheese and some tortilla strips or crushed tortilla chips.

This does not make a thin watery soup, it should be pretty thick, if you prefer it to be a bit thinner increase the water amount a bit. I use 2-4 chicken breasts, it depends on how big they are at the store and how much chicken you want in your soup. If you don't care for black beans just use an extra can of kidney beans. I believe I posted this recipe a couple of years ago, but have made a few changes since then. Enjoy!
