2-4 boneless/skinless chicken breasts
1/2 cup diced onion
2 cloves garlic minced
1 can red kidney beans, drained
1 can black beans, rinsed and drained
1 can diced tomatoes, undrained
1/2 can corn, drained
1 small can chopped green chili's
1/2 cup water
1 1/2 teaspoon beef boullion
1 or 2 teaspoon(s) chopped cilantro (can use a bit of dried if fresh not available)
2 teaspoons chili powder
1/2 teaspoon cumin
Salt and Pepper to taste
Sour cream, shredded cheddar cheese and tortilla chips for garnish and sides.
Cube chicken and brown in a skillet with 1 Tablespoon of olive oil.
Season with a bit of salt and pepper.
In a large soup pot add all ingredients and simmer for about an hour.
Serve the soup with a dollop of sour cream, a bit of shredded cheddar cheese and some tortilla strips or crushed tortilla chips.
