1 pound baby carrots
2 Tablespoons extra virgin olive oil
salt and pepper to taste
Preheat oven to 400ºF.
Place baby carrots in a Pyrex cooking dish.
Toss carrots in olive oil, salt and pepper until evenly coated.
Roast at 400ºF until carrots are soft (test them with a fork).
