Here is a fun twist on traditional marshmallow-covered sweet potatoes that the whole family will love. It’s great all year round, but particularly nice with your Thanksgiving turkey—and there'll be no fighting over the marshmallow topping, since everyone will get plenty of their favorite part!
1 (29-ounce) can sweet potatoes, drained
1/2 cup sugar
5 Tablesoons butter, softened
1/2 teaspoon ground nutmeg
8 large marshmallows
2 cups crushed cornflakes
Preheat the oven to 350ºF.
Grease a 2-quart shallow baking dish.
Mash the sweet potatoes in a large bowl.
Stir in the sugar, butter and nutmeg.
Shape the mixture into 8 balls and press a marshmallow into each.
Coat the balls with cornflakes and flatten slightly.
Arrange the balls in the prepared baking dish.
Bake until lightly browned, 10 to 15 minutes.
