I never pass up a good looking Lamb recipe. This looks promising but I think I'd rather use chunks or "fries" cut from Sweet Potatoes.
2 Aubergines cut into large cubes
1 teaspoon ground cinnamon
1 teaspoon crushed red chillies
1 teaspoon ground nutmeg
1 teaspoon smoked paprika
1 teaspoon ground ginger
1 teaspoon ground cumin
1 teaspoon ground dried mint
10-12 lamb ribs
1 Tablespoon olive oil
1/2 lemon juiced
salt to taste
2 Tablespoons yoghurt
1 teaspoon dried mint
Cut the aubergines and place them on a baking tray and drizzle with a little oil and salt
Combine all the spices and rub them onto the lamb adding salt and oil and lemon juice.
Place the ribs over the aubergines and put in a hot oven at 425║F for about 20 minutes or more if you like the lamb well cooked.
Remove and serve with a pinch of Cayenne pepper and eat with your hands and some flat pita bread to help soak up all the flavours.
Mix yoghurt and dried mint to serve on the side.
Dip the lamb and augergine chunks in as you please...
