A blend of rice, chicken, tomato and mixed vegetables from Mali (Africa)
We did not like it.
We did not like this one, but I can’t put my finger on Why? It started off as merely “not tasty”, but by the time I finished my portion, I had changed my opinion to a firm No. My DS didn't finish his, but the dog enjoyed finishing it for him.
If I were to make it again, I would try using CANNED mixed vegetables instead of frozen. I was raised southern, and we like our vegetables cooked to death. There is also a tendency for the rice to stick, so I would use a Teflon pan.
1 canned chicken, fully cooked [I used Swanson’s canned chunk chicken]
1 onion, chopped
1 (6-ounce) can tomato paste
2 cups uncooked rice
4 1/2 cups water
Salt [3/4 teaspoon salt]
Pepper [dash of pepper]
1 package frozen mixed vegetables [I used a mix of green beans, corn, cubed carrots, lima beans and English peas.]
Drain chicken and cut up into large pieces.
Place in a large pot.
Add onion, tomato paste, rice, and water.
Season with salt and pepper.
Bring to a boil.
Reduce heat to low and cook 10 to 15 minutes.
Add mixed vegetables.
Bring to a boil again, then reduce heat and cook over low heat until rice and vegetables are fully cooked [about 10 minutes]
