4 cups Monterey Jack or Cheddar cheese
1 (8-ounce) package cream cheese, softened
1/2 cup crushed pineapple in juice, undrained
1/2 cup finely chopped dried apricots
1/3 cup chopped walnuts
Assorted crackers or apple wedges for dipping
Combine cheeses, pineapple and apricots in a large mixing bowl.
Beat at low speed until mixture is well blended.
Transfer mixture to sheet of waxed paper; shape into 1-foot log.
Just before serving, roll log in walnuts.
Serve apple slices and or assorted crackers on the side.
Makes 12 to 15 servings
