2 sticks real butter, softened
1/2 cup powdered sugar
2 1/4 cups flour, divided
2 cups granulated sugar
4 large eggs
1 Tablespoon grated lemon rind
1/2 cup fresh lemon juice
Preheat oven to 350ºF.
Put waxed paper or parchment paper in bottom of pan to prevent sticking.
In food processor, mix the butter, 1/2 cup powdered sugar, and 2 cups flour.
Press mixture into greased 9x13 pan.
Bake 20 minutes.
Meanwhile, mix granulated sugar and 1/4 cup flour.
Add eggs, lemon rind and juice.
Pour over crust.
Bake 25 minutes longer.
Sprinkle with powdered sugar while hot.
Cut into 2 inch squares.
