4 ounces German's Sweet Baking Chocolate
2 Tablespoons milk
1/4 cup sugar
3/4 cup butter or margarine, softened
2 teaspoons vanilla
2 cups flour
1/4 teaspoon salt
1 (3 1/2-ounce) tube almond paste (or an 8-ounce can, as much as needed)
granulated sugar for rolling cookies
Heat oven to 350ºF.
In small saucepan over low heat, melt chocolate in milk, stirring occasionally, until smooth.
In large bowl, beat 1/4 cup of sugar and butter or margarine until light and fluffy.
Blend in chocolate mixture and vanilla.
Stir in flour and salt; mix well.
Using rounded teaspoons of dough, shape into balls.
Make indentation in center of each cookie.
Using a scant 1/4 teaspoon of almond paste, shape paste into small balls.
Fill indentations in chocolate dough with almond paste balls.
Press chocolate dough around filling to completely cover almond paste ball.
Roll the dough around in your palms until the balls are smooth.
Place balls 2 inches apart on ungreased cookie sheets.
Bake at 350ºF for 9 to 11 minutes or until set.
Remove from cookie sheets; roll in sugar.
