No-Bake Rocky Road Cookies
This is a Good and Bad and Good again story. The Good part is that my mother made these cookies every year for Christmas and they have always been my favorite. The Bad part is that when my mother lost the recipe she found another that was made with peanut butter and tried to palm it off as the same thing. When I found part of this recipe over a year ago it had no peanut butter and I adjusted it to make it like I remembered. The Good part is that DD Rebeca is making these today for the second year in a row. We'll get photos tonight.
1/2 cup butter or shortening
2 cups sugar
1/2 cup milk
1/2 cup cocoa powder
3 cups oatmeal
2 teaspoons vanilla extract
1/2 cup flake coconut
1/2 cup walnuts, chopped
1/2 cup mini-marshmallows
Bring the butter, sugar, milk and cocoa powder to a boil, stirring constantly.
Boil for 1 minute
Combine the oatmeal, vanilla, coconut and walnuts.
Then add the marshmallows and toss.
Stir together with the liquids and drop by teaspoonfuls onto a lined cookie sheet.
Refrigerate cookies and sheet at least 30 minutes, or longer until set.
