This will be her 3rd year in charge of making these refreshing treats and she insists on including a slice or two of real lemon on the plate with them..."It's in the picture!"
1 cup white chocolate
5 Tablespoons unsalted butter
3 Tablespoons heavy cream
1 pinch salt
1 teaspoon lemon extract
powdered sugar, for dusting
Melt chocolate, butter and cream in a microwave (or in a double boiler).
Stirring every 30 seconds until smooth.
Stir in salt and lemon extract.
Allow to cool slightly before covering with plastic wrap.
Refrigerate for 2 hours or until firm enough to handle.
With a melon baller or small spoon scoop out mixture and form into 1-inch balls.
Toss with powdered sugar to coat.
Store covered in the refrigerator for up to one week.
(Freeze for longer periods.)
