Although these Apricot Coconut Balls aren't rolled in walnuts, the flavor almost jumps off the page.
For me, I can't emphasize enough the importance of everyone in the family having an integral part in preparing the family celebration.
2 cups dried apricots (about 8 ounces)
3 cups flaked coconut
1 cup sweetened condensed milk
1 teaspoon fresh lemon juice
1 cup finely chopped walnuts
Chop apricots by pulsing in food processor until finely chopped or mincing on cutting board with sharp knife.
Mix apricots and coconut in large bowl until well blended.
Stir in sweetened condensed milk and lemon juice until evenly blended.
Shape into 1-inch balls by rolling between your palms (a messy project).
Roll in chopped walnuts.
Let stand at room temperature until firm.
Store in refrigerator.
Makes 48 balls.
