Serves: 4 - 6
2 cups cooked, cubed chicken or turkey (LuAnn adds, may also use a vegetarian product)
1/2 cup plain yogurt (nonfat Greek yogurt is great)
3 Tablespoons mayonnaise
1/2 cup chopped cashews (the photo in the catalog showed them WHOLE, or nearly so)
1/4 cup chopped apricots
1/4 cup chopped golden raisins
1/2 cup green peas
1 teaspoon curry powder (Penzeys recommends their exclusive blend, called Balti Seasoning)
8 to 12 slices bread of your choice (if making sandwiches; Michael recommends Ezekiel Sprouted Grain bread)
1-2 leafy greens
In a medium bowl, combine the meat, yogurt, mayonnaise, cashews, apricots, raisins, peans and curry powder; mix well.
Serve on bread with some leafy greens for a most satisfying sandwich.
