1 1/4 cup flour
1 1/4 cup Ouick cooking oats
1/2 cup sugar
3/4 cup butter, melted
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons vanilla
3/4 cup Apricot preserves
1/2 cup flaked coconut
Heat oven to 350║F.
In large bowl, combine all crumb ingedients.
Beat at low speed until crumbly.
Reserve 1 cup crumb mixture; press remaining crumb mixture on bottom of greased 13 x 9" baking pan.
Spread apricot preserves to within 1/2" from edge of crumb mixture;
sprinkle with reserved crumb mixture and coconut.
Bake for 22 to 27 minutes or until edges are lightly browned.
Cool completely; cut into bars.
You could use other flavor jelly if desired.
