Another traditional Christmas cookie favorite which my mother always made. I remember liking the combination of sweet and salty.
2 (3-ounce) packages cream cheese, softened
1 cup butter or margarine
1 cup sugar
1/2 teaspoon almond extract
2 cups flour
1 Tablespoon + l teaspoon baking powder
1/2 teaspoon salt
Cornflake crumbs (amount not given)
Candied red and green cherries (amount not given)
Using an electric mixer, cream together the cream cheese, butter or margarine, sugar and almond extract.
In a separate container, stir together the flour, baking powder and salt, then beat into the dough until smooth.
Cover the bowl and chill the dough 1 to 2 hours.
When ready to form and bake the cookies, preheat the oven to 350ºF.
Shape the dough into small (no larger than 1-inch) balls.
Roll the balls in crushed cornflake crumbs.
Arrange on an ungreased cookie sheet, allowing 2 to 3 inches in between.
Press a red or green candied cherry firmly into the center of each ball.
Bake in the preheated oven for 12 to 15 minutes, or until lightly browned on the bottom. (The tops of the cookies will still be pale).
Store cooled cookies in an airtight container.
