These delicate, crispy cookies don't taste like potato chips, they just taste yummy! :)
Though simple, the dusting of powdered sugar makes them pretty enough for a cookie plate.
2 cups butter or margarine
1 1/2 cups sugar
2 teaspoons vanilla
3 1/2 cups flour
3 ounces potato chips, crushed
Preheat the oven to 350ºF.
Beat the butter, sugar and vanilla together until light and fluffy.
Gradually beat in flour.
Stir in crushed potato chips.
Drop dough by teaspoonfuls onto ungreased cookie sheets.
Criss-cross lightly with the tines of fork (alternatively, you can flatten cookies with the bottom of a glass tumbler).
Bake the cookies in the preheated oven until lightly golden, about 5 to 10 minutes.
Sprinkle tops with powdered sugar.
Transfer to racks to cool.
Store in airtight container.
