Ever since I was a child, "Snowballs," or Mexican Wedding Cakes have been one of the cookies we bake at Christmas. Much as I love my mother's recipe - I think this one, called "Paradise Cakes," may be even better! This is what the header in the cookbook (see source below) says: "When Archway packages these cookies at Christmastime, it's like you died and went to heaven, to be able to enjoy something so rich, and so good!"
Makes 6 dozen
1 pound butter softened
6 Tablespoons powdered sugar
6 Tablespoons granulated sugar
1 teaspoon vanilla or almond extract
4 cups flour
1 pound shelled pecans, chopped
Preheat oven to 325ºF.
Cream butter five minutes on medium speed of electric mixer.
Add remaining ingredients one at a time.
Shape dough into small marble-sized balls.
Place 2 inches apart on ungreased baking sheet.
Bake 325ºF for 20 to 22 minutes or till "set" but not browned.
While hot, roll each cookie in powdered sugar.
Re-roll twice more.
