The Salad that Blew My Mind
Raw kale. Mango. Pumpkin seeds. Massaging the food with your hands.
Umm, Aarti? Recent winner of The Next Food Network Star? Are ya crazy?!?!
She is crazy. CRAZY AWESOME!!! This salad seriously blew my mind. The tiny bits left in the bottom of the bowl? Totally shoveled them into my mouth with my hands. It's one of the tastiest vegetable recipes I've eaten in weeks. It's unbelievable.
Here's why I love this salad... other than the fact that it's shockingly delicious. It's different. And fun. And beautiful to look at. And freakishly good for you. And it stretches you, makes you try something new without being freaked out, and opens your mind to foods from other places.
This salad doesn't have crazy spices; it's just a really unique combination of foods, and the method is kind of bizarre. But I promise... there is NOTHING keeping you from trying this. Nothing. Other than being stubborn or scared. Get over those two and you're good to go.

Serves 4 to 6
1 bunch kale, stalks removed and discarded, leaves thinly sliced
1 lemon, juiced
1/4 cup extra-virgin olive oil, plus extra for drizzling
2 teaspoons honey
Freshly ground black pepper
1 mango, diced small
Small handful toasted pepitas (pumpkin seeds)
In large serving bowl, add the kale, half of lemon juice, a drizzle of oil and a little kosher salt.
Massage until the kale starts to soften and wilt, 2 to 3 minutes, then set aside.
In a small bowl, whisk remaining lemon juice with the honey and lots of freshly ground black pepper.
Stream in the 1/4 cup of oil while whisking until a dressing forms, and you like how it tastes.
Pour the dressing over the kale, and add the mango and pepitas.
Toss and serve.
