Yield: 4 servings
4 lime wedges (I omitted)
2 Tablespoons coarse sugar (I omitted)
2/3 cup thawed lemonade concentrate (I think limeade concentrate would be good as well)
1 cup frozen unsweetened raspberries
2 cups ice cubes (I used more water than ice, since all of my fruit was frozen and had already made the drink icy)
2 (10-ounce) packages frozen sweetened sliced strawberries, thawed (I used 2 cups unsweetened strawberries, since that was what I had, then added sugar to taste - about 1/3 cup)
1/2 cup frozen blueberries (I used 1 cup)
1 Tablespoon sugar
1/2 cup tequila (I omitted, adding water as needed to process the frozen fruit/ice)
Using lime wedges, moisten the rims of four margarita or cocktail glasses.
Sprinkle coarse sugar on a plate.
Hold each glass upside down and dip rim into sugar; set aside.
Discard remaining sugar on plate. (Beautiful, but I skipped coating the rims with sugar).
In a blender, combine the lemonade concentrate and raspberries; cover and process until blended.
Press mixture through a fine sieve; discard seeds. (I also skipped THIS step, leaving the seeds, which were virtually obliterated in my VitaMix anyway).
Return raspberry mixture to blender.
Add the ice, strawberries, blueberries, sugar and tequila.
Cover and process until smooth.
Pour into prepared glasses.
