1 1/2 pounds ground beef
1 packet taco seasoning [Ortega]
3/4 cup water
8 to 10 flour tortillas [Azteca 8 inches]
1 (8-ounce) can tomato sauce [Hunt’s no sodium]
1 (10-ounce) can enchilada sauce [mild red Old El Paso]
1 1/2 to 2 cups shredded cheddar cheese
Brown ground beef and drain.
Add taco seasoning mix and water and cook for 10-15 minutes.
I like to put all the tortillas out on the counter at once and fill them at the same time.
On each tortilla, place about 2 Tablespoons taco meat, 1 Tablespoon cheese, and 1/2 to 1 Tablespoon enchilada sauce.
Roll up and place in 9x13 sprayed casserole dish.
When all are in place, top with remaining enchilada sauce, tomato sauce, any leftover taco meat, and cheese.
Bake at 350ºF for 15-18 minutes, or till bubbly.
May microwave instead of baking, 5 minutes at full power, turning once.
