1 1/4 pounds ground beef
2 packages (3 ounces each) Oriental flavor Instant Ramen Noodles
2 1/2 cups water
2 cups frozen vegetable mixture
1/4 teaspoon ground ginger
2 Tablespoon thinly sliced green onion
In a large, nonstick skillet, brown ground beef over medium heat for 10 to 12 minutes or until beef is no longer pink, breaking up into 3/4" pieces.
Remove with slotted spoon; pour off drippings.
Season beef with one seasoning packet from noodles; set aside.
In the same skillet, combine the water, vegetables, ginger, noodles and contents of remaining flavoring packet.
Bring to a boil.
Reduce heat; cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally.
Return beef to the pan; cook for 2-3 minutes or until heated through.
Stir in onion.
NOTE:* My DS doesn't like vegetables too much, and my DH doesn't like noodles too much, so I separated them.
I mixed the 2 cups water, cooked seasoned beef, Ramen noodles, and second seasoning packet in one pot.
I stir-fried the vegetables [frozen Florentine mix (broccoli, cauliflower and carrots)], along with 1/8 of an onion cut into wedge-shaped pieces and separated. I seasoned this with soy sauce and a little brown sugar and served it over rice.
**I didn't use the ground ginger or the green onions.
The flavor is good but pretty strong. Next time I will either use one packet of oriental flavored Ramen noodles and one of beef flavored, or only use one seasoning packet from the oriental flavored noodles.
