A good casserole to use up leftover meat.
2 1/2 cups cooked rice
2 (10 ounce) package chopped broccoli, cooked and drained
1 can cream of celery soup
1 can cream of chicken soup
1/2 cup mayonnaise
1 onion, chopped and sauteed
2 cups cooked, chopped chicken, ham, OR pork
2 cups grated cheddar cheese
1 roll crushed Ritz crackers
Spread rice in buttered 9x13 casserole.
Spread broccoli over rice.
Mix the soups and the mayonnaise; add onion and meat.
Season to taste.
Pour sauce over broccoli.
Top with cheese and cracker crumbs.
Bake at 350 degrees for 35-45 minutes.
This one was given to me a long time ago, before I had kids. I quit using it when the kids decided they didn't like broccoli, but now DS is old enough to like broccoli again. He did, however, object to the pork I used, which was seasoned with a dry barbecue rub. He said I should stick with plain chicken.
