1 cup wild rice
3 cups water or chicken broth
1 cup sliced or diced dried Turkish apricots
1/2 diced red bell pepper
1/2 cup rice vinegar or white vinegar
1/2 cup apple juice or orange juice
salt and pepper to taste
sugar to sweeten if desired
Cook the wild rice in the chicken broth. ( I used water)
When rice pops open it is done.
I used a rice cooker but you can cook it in boiling liquid on the stove top.
When cooked, cool it and then add the red bell pepper and apricots.
Mix the vinegar of your choice and juice of your choice.
I used white vinegar and apple juice as it is what I had on hand.
Pour over rice and other ingredients.
Refrigerate a couple hours before serving.
