Unbaked Jicama "Fries"
Raw jicama has a distinctive texture that reminds me somewhat of a crisp radish, water chestnut, or even an apple or raw potato! This texture adds a nice crisp crunch to salads. However, jicama has very little flavor -- just the slightest hint of sweetness. Surprisingly, we introduced raw jicama to attendees at the Walk on the Beach (vegan) retreat, cut in French-fry shaped pieces, then lightly tossed in the same seasoning mixture one might coat potatoes wedges with before roasting. (See recipe below). Although I wasn't "blown away" by them, many found they enjoyed them very these fat-free "fries" very much! -LuAnn
Makes 4 small servings (4 ounce)
1/2 teaspoon chili powder
1/2 teaspoon sweet paprika
1/2 teaspoon curry powder
1/2 teaspoon onion powder
Salt to taste
1 pound raw jicama, peeled, cut into French-fry shaped pieces
In a small bowl, stir together the seasoning mix.
Toss the cut jicama "fries" in the seasoning mix until evenly coated.
