6 cups water
1 28 ounce can tomatoes, cut up, undrained
1 8 ounce can tomato sauce
1 large onion, chopped
1 cup chopped cabbage
1 medium carrot, chopped
1 stalk celery, chopped
4 teaspoon instant beef bouillon granules
1 Tablespoon dried Italian Seasoning, crushed
1 teaspoon *bottled minced garlic, or 2 cloves garlic, minced
1/4 teaspoon pepper
1 (15 ounce) can ** 1st time cannellini or * 2nd time Great Northen beans
1 (10 ounce) package *frozen lima beans or 1 9 ounce package frozen Italian~style green beans
4 ounce package *dried linguine or spaghetti, broken
1 small zucchini, halved lengthwise and sliced
2 to 3 Tablespoon purchased pesto (Optional) I did not use
Grated Parmesan cheese
Combine water, undrained tomatoes, tomatoe sauce, onion, cabbage, carrot, clery, bouillin, Italian seasoning, garlic and pepper in a 5 to 6 quart Dutch oven. Bring to boiling, reduce heat. Cover and simmer 10 minutes.
Stir in undrained canned beans, lima beans, linguine and zucchini. return to boiling, reduce heat. Simmer, uncovered 15 minutes. Serve in bowls. Top each with 1 tsp. pesto if desired. Pass Parmesan cheese to sprinkle over soup.
