1/4 cup mayonnaise
1 Tablespoon sugar
1/2 teaspoon lemon juice
1/2 cup whipping cream, whipped
2 cups diced apples
1/2 cup broken walnuts
1 cup julienned celery
Blend mayonnaise, sugar, lemon juice and salt.
Fold in whipped cream.
Combine apple, walnuts and celery; fold into mayonnaise and whipped cream mixture.
Makes 6 servings.
I make sure I have the mayo/cream mixture ready before I cut up the apples so that they don't brown before adding them to the mixture.
I usually use 2 types of apples; last time I used Granny Smith and Empire apples. The subtle differences made it very tasty.
I use only 1/4 cup celery with this (more if I double the recipe) - it is plenty for us. I use extra apples and nuts. The mayo/whipped cream makes so much that I just keep adding the apples, nuts and celery until I have as much as I want.
You really do need to keep this refrigerated because of the mayonnaise and cream.
