6 Cups Water
4-6 oz Rock Sugar or Turbinado Sugar
1/3 Cup Tapioca
1 Can (14ounce) Coconut Milk
4 ounce Taro Root/Sweet Potato (cut into 1/2" chunks)
Bring water to boil.
When sugar is melted, add tapioca. Reduce to about medium heat (want the water to still bubble a little)
Cook tapioca, stirring often.
When tapioca is about half way translucent, add taro/sweet potato chunks.
When tapioca and taro/sweet potato is cooked, add coconut milk.
